I think my angle is not the best, I think if I could be seated up more so that my head could bend downwards, instead of reaching upwards as it is in the pictures, that'd make it easier.
So here are my questions, what are some effective cock rings so I can go into position with a great erection and not lose it? There are so many cock rings and I've found many don't work.
Are there any ideas for better angles to reach it than what I use?

The allover strength and flexibility you've gained with your intense personal training are great and will stand you in good stead when you get that cock into your mouth. You're completely correct about needing to shift your focus to increasing flexibility in your back.
My personal advice: shift away from the X position and concentrate on the Plow and you'll be amazed at how much progress you'll make. Concentrate on keeping a good, smooth all-over back curve, and by "back" I mean everything from the back of your head down to your ass and thighs.
Doing the plow with something behind you that you can use to get traction on with your feet should make all the difference. I've always found any position that hooks my legs behind my shoulders or head to be more of a hindrance than a help, though I know we have guys who love the X. The plow allows you to use the strength of your legs and the weight of your torso for a much easier stretch than any other position.

Okay, so I see the plow position here.

Do you have your feet pressing against an object there? Do you think pressing against a wall is good, or is it better to have something that's directly above the feet?
Also, from my pictures, does it look like I'm practicing the C and P positions properly?

It's great to see you again.
Here's my 2c worth. Remember to warm up (tricking works a treat).
Be empty of food. And also counteract the forward bends with some backbends.
For the C, you are pulling on your straight legs with your hands.
I find it easier to bend my legs and wrap my arms around under them- each hand to the opposite thigh.
Then lean back while attempting to straighten your legs.
If you are on the floor, your elbows will now be touching the floor.
You can change the angle by shifting your arms along your legs. Close to your knees and it is a normal pike, or closer to your butt where you are gonna end up in a tighter C.
Then balance how much you lean back and how much you push away with your legs to alter the bend.
Keep us posted. I don't think you will take long to get there.

I used a half-x position when I was 13 and could only barely lick the head. I guess then my back wasn't very flexible. I wish I had known about the plow position back then, as I'd probably have my cock in my mouth. I've used that position a lot in the past 6-7 years, and occasionally the C position, and they've worked pretty good a limbering me up. Unfortunately, my legs need limbering up and my belly is getting in the way. Oh, if I knew then what I know now...

I don't use cockrings much because they make my stomach ache - weird but true.
When I do use them I've tended to use the "gummi" kind because they're so stretchy. Easy to put on and take off. They do have a tendency to catch your pubes when you're trying to take them off - ouch!
My favorite of all time is a leather watch-band - it's got a buckle so it's easy to get on and off, it's nice and easy on the skin and it's very adjustable.

There are a couple of things I would suggest you try, to help reach your goal. One is counter stretching, or bending backwards in the opposite direction of the way you want to go. The other, despite your waste looking pretty trim, is sit-ups, to condition your stomach. I do around 150 at a time and can move each can in my six pac independent of each other. With such control you can really pull your stomach in and down allowing your diaphragm and lungs more room to expand.
