My experience is that it is totally natural that your flexibility varies from day to day. Especially after a good progress in flexibility, I am always more stiff the next day, just to be back at it with improved flexibility on the third day. It seems that the body needs that day to recover and I wouldn't want to force it.
When it comes to diet, anything that makes your waist smaller should be a great way to improve your ability to bend forward.
