So does anyone have tips on staying soft? It seems like as soon as I get all positioned and ready to go for it, I'm so excited it'd take years to get as soft as some people seem - let alone once I start going for it I get hard as a rock...
Suggestions?

Yeah - that's a hard problem to deal with 
I don't know what to tell you other than distraction - think of it as on opportunity to cultivate your abilities to be mindful and really pay attention to the inner workings of your mind. Meditation can be fun!
Premature ejaculators deal with similar problems so it might help to read up on the techniques they use to hold back.
